Healthy Recipe to Fuel Athletes

Ingredients

  • 2 tbsp pomegranate molasses

  • 1 ½ tsp sweet chili sauce

  • 1 ½ tsp low-sodium soy

  • 1 clove garlic, grated

  • 2 tsps honey

  • juice of 1 lime

  • kosher salt

  • black pepper

  • Four 8 oz center-cut skinless salmon fillets

  • ½ cup pomegranate arils

  • ¼ cup finely cut cilantro leaves

  • 1 tbsp olive oil

  • 1 serrano pepper, seeded and finely chopped

Instructions

  1. Whisk the pomegranate molasses, sweet chili sauce, soy sauce, garlic, 1 tsp of the honey, half of the lime juice, ¼ tsp salt and a pinch of pepper in a medium bowl until well combined. Brush the glaze n the top of the salmon fillets and season each with ¼ tsp salt and a pinch of pepper.

  2. Put the fillets in the basket of a 6-quart air fryer making sure they are not touching. Cook at 400 degrees F until the tops are dark and caramelized all over and the salmon easily flakes with a fork when pressed, around 6 minutes for rare and 7 minutes for medium.

  3. Combine the pomegranate arils, cilantro, olive oil, serrano, remaining 1 tsp honey, remaining lime juice, ¼ tsp salt, and a pinch of pepper until the mixture is well combined.

  4. Put the salmon on a serving platter and spoon the pomegranate relish over the top.

The Douglass Branch Library is hosting a do-it-yourself events for kids this Wednesday. This week they will be making lava lamps. This event is happening on Wednesday, May 7th from 4:00pm - 5:00pm at the Douglass Branch Library, 504E. Grove St, Champaign.

On May 6th from 5:00pm - 6:30pm Little Louie’s in Northbrook is hosting Spider-Man Bingo. This event will be full of food, bingo, and a special visit from Spider-Man. Dinner will be at 5:00 pm, Spider-man arrives at 5:15 pm, and bingo starts at 5:45 pm. Bring your friends and family to a fun night!
