Healthy Recipe to Fuel Athletes

Ingredients

  • Nonstick cooking spray

  • 1 cup finely ground almond flour

  • ½ cup all-purpose flour

  • 1/3 cup vanilla whey protein powder

  • 1 tsp baking powder

  • ½ tsp kosher salt

  • ¼ tsp baking soda

  • ½ tsp ground cardamom (optional)

  • ½ cup almond butter

  • ½ cup pack light brown sugar

  • ½ cup plain whole-milk Greek yogurt

  • ¼ cup unsweetened almond milk

  • 2 eggs

  • 1 cup fresh raspberries

  • ¾ cup sliced almonds

Instructions

  1. Preheat the oven to 350 degrees F and line a 12-cup muffin pan with paper liners and spray it with the cooking spray.

  2. Combine the almond flour, all-purpose flour, protein powder, baking powder, salt, baking soda, and cardamom with a whisk until its combined

  3. Combine the almond butter, brown sugar, yogurt, and almond milk in a bowl until smooth and combined. Add the eggs and then whisk it until it is just combined. Add in the dry ingredients, until just combined, and then add in the raspberries. Spoon the batter into the muffin tin and put a tablespoon of slivered almonds on each muffin.

  4. Bake until the muffins are golden brown around the edges and a toothpick comes out clean. Around 25 minutes. Let cool for 5 minutes in the pan, then transfer to a wire rack.

I previously played at Old Dominion University and have four seasons of experience at forward, midfield, and defense. I offer personalized training for individuals or small groups with skills such as passing accuracy, technical footwork, and match tactics. Through experience working with kids at any age and level, sessions will be tailored to help you meet your personal goals and dreams!

DIY Kids

The Douglass Branch Library is doing a weekly DIY activities for kids. This week they are teaching them how to make slime. The event will take place on Wednesday, March 5th from 4:00pm - 5:00pm at the Douglass Branch Library.

Nature Play Date

The Prieto Community Center is hosting Nature Play Dates to explore springtime. Through stories, nature crafts, games, animal visits, and imaginative play you and your child will learn more about the season. This is a freestyle play dates that allows children to choose what they want and go at their own pace. The event is happening at the Prieto Community Center on Friday, March 7th from 9:30am - 11:30am. The cost is $20 for residents and $26 for non residents.
