Healthy Recipe to Fuel Athletes

Ingredients

  • 1 tbsp chili powder

  • Kosher salt

  • Ground black pepper

  • 1 pound baby bell peppers or 12 to 15 peppers, halved, steamed and seeded

  • 1 large yellow onion, cut in half and sliced thinly

  • 2 tbsp olive oil

  • 1 ½ pounds boneless, skinless chicken breast

  • Juice of 1 lime, plus lime wedges

  • 8 flour tortillas, warmed

  • Toppings of choice

    • Shredded cheese

    • Guacamole

    • Hot sauce

    • Salsa

    • Sour cream

Instructions

  1. Preheat the broiler to high and line a baking sheet with foil

  2. Combine the chili powder, 2 tsps of salt, and 1 tsp of pepper in a bowl. Place the peppers and onions on the baking sheet, drizzle with 1 tbsp of olive oil and half the seasoning mixture.

  3. Broil til the peppers and onions are softened and are starting to char, around 10 minutes.

  4. While the onions and peppers are cooking, cut the chicken into ¼ inch thick slices and put in a large bowl along with the rest of the seasoning mixture and 1 tbsp of oil.

  5. Add the chicken on top of the onions and peppers once they have finished broiling and then put the baking sheet back in the broiler until the chicken is starting to brown and cooked through, around 5 minutes. Drizzle with some lime juice.

  6. Served with the warm tortillas and the toppings of your choice!

“I am a 2005 goalkeeper. I grew up in Las Vegas and played for a local team there until I was 15 then I moved to play for Real Salt Lake academy for the u17s and had a great experience there for a year. I was scouted and transferred to play for another MLS academy. I joined Orlando City for my second u17 year and had a great season and later that year was called up to play with the u19 USYNT. I then played 2 more years with Orlando City B in the MLSNext Pro league and training with the first team on a regular. I have played 6 professional games with Orlando City.”

Woodstock Walk 2025

Come join the group as they search for the wood snipe, American Woodcock, as the males perform their fascinating courtship display at dusk. A short presentation will proceed the walk to find the sky dancers. Meet the group at the east entrance of the Buffalo Trace Prairie on Rt 47 / N. Lombard across the street from the Museum of the Grand Prairie. This event is free, open to all ages, and will be about a 1 mile long hike.

Wiggle Time

The Recreation Center of Highland park (1207 Park Ave. West, Highland Park, IL) hosts a wiggle time on January 30th at 10:30 AM - 12:30 PM. The Recreation center is opening up their basketball courts for kids to come play outside of the house. They will provide scooters, balls, and many more fun equipment for your kids to play with. There is no advanced registration required but all participants must fill out a waiver and have a Park District account, along with that there is a fee of $8 - $10 that can be paid at the front desk.
