Healthy Recipe to Fuel Athletes

Ingredients

  • 1 large egg

  • 1 cup almond butter or peanut butter, cold or at room temperature

  • ½ cup light or dark brown sugar

  • 1 tsp baking soda

  • Optional: ½ tsp pure vanilla extract

  • 1 cup semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line two large baking sheets

  2. In a medium bowl, whisk the egg until it is beaten. Add the almond butter, brown sugar, baking soda, and vanilla. Mix together until the ingredients are well combined. Then fold in the chocolate chips until they are distributed throughout the batter.

  3. Scoop the dough onto the prepared baking sheets and gently press down on the dough with the bake of a spoon. If the dough is oily you can pat it with a paper towel to absorb the oil. You can press more chocolate chips into the dough to add an extra touch of chocolate.

  4. For soft cookies bake for 10 minutes, for crispier cookies bake for up to 12 minutes.

  5. Let the cookies cool for 10 minutes on the baking sheet before transferring them to a wire rack to completely cool. Enjoy!

Hi everyone! My name is Lauren Seppi and I am a rising sophomore outside back at the University of Illinois. I have a lot of coaching experience dating back to my freshman year of highschool. I am from Saint Louis Missouri and played club for Saint Louis Scott Gallagher and through SLSG coached different girls and boys teams of all ages. I love helping develop kids and helping them find the love and joy the game brings!

Level Up STEM - Egg Drop Challenge

The Mahomet Public Library is hosting an event for school age kids to learn more about STEM and increase their skills by taking on new STEM related challenges. The first challenge in their series is an Egg Drop Challenge that is happening Tuesday, June 11th from 3:00 PM - 4:00 PM. Registration is required!

Starlight Concerts - J. Davis Trio

Come out to Tallmadge Park (927 Noyes St) in Evanston for the first of their Starlight concerts for this summer. Attendees are encouraged to bring law chairs, blankets, and snacks to enjoy while listening to the concert. The event will be from 6:00 PM - 8:00 PM on Tuesday, June 10th.

For your kids to do well in a sport it requires them to spend a lot of time practicing and competing in that sport. This usually involves your kids doing activities that are directly related to their sport in order to help them improve their skills. But there are non sports related activities that can also help your kids improve valuable skills that are needed on the field. Some skills that can be built off the field by doing activities like cooking and yoga are teamwork, problem solving, and focus.
