Italian Chopped Salad

Ingredients

• Lemon Vinaigrette

  • ¼ cup olive oil

  • 1 ½ tbsp lemon juice

  • 1 tbsp red wine vinegar

  • ½ shallot, finely chopped

  • 1 garlic clove, finely chopped

  • 1 tbsp dried oregano

  • ½ tsp sea salt

  • Ground black pepper

• The Salad

  • 1 small head of iceberg lettuce

  • 1 head radicchio

  • ½ small red onion, thinly sliced

  • 1 pint cherry tomatoes, halved or quartered

  • 1 can chickpeas, rinsed and drained

  • 4 oz fresh pearl mozzarella

  • 4 oz provolone cheese, diced

  • 5 pepperoncini, stemmed and sliced

  • 1 tsp oregano

  • sea salt and fresh black pepper

Instructions

1. The dressing

   1. In a small bowl, combine the olive oil, lemon juice, vinegar, shallot, garlic, oregano, salt, and pepper, with a whisk. Set aside.

2. For the salad

   1. Cut the iceberg lettuce into ¼ inch strips and do the same with the radicchio. Making sure to cut out the core.

   2. In a large bowl, combine the lettuce, radicchio, tomatoes, chickpeas, mozzarella, provolone, and pepperoncini. Drizzle with dressing and toss gently to combine. Season with the salt and pepper and toss again. Sprinkle with the leftover oregano and enjoy!

Pop-Up Day Camp

Join the Writers Theatre for a day-long theatre adventure! Each day will include a variety of fun hands-on activities focused on acting, devising, design, and building, along with a backstage tour of the theatre. No prior theatre experience required.
