Healthy Recipe to Fuel Athletes

Ingredients

  • For the Salad

    • 2 cups water

    • 1 cup quinoa

    • Pinch of salt

    • 2 cups grape tomatoes that are halved

    • 1 English cucumber that has been chopped

    • ½ cup diced red onion

    • 1/3 cup pitted kalamata olives that have been halved

    • 1/3 cup diced red onion

    • ½ cup crumbled feta cheese

    • Kosher salt and ground black pepper

  • For the dressing

    • 1/3 cup olive oil

    • 2 tbsps red wine vinegar

    • 1 tbsp fresh lemon juice

    • 1 tsp honey

    • 1 clove of garlic, minced

    • ¼ tsp Dijon mustard

    • 1 tsp dried oregano

    • Kosher salt and black pepper

Instructions

  1. Rinse the quinoa under cold water using a strainer. Add quinoa, water, and salt to a medium saucepan and bring the mixture to a boil over medium heat. Boil for 5 minutes and then turn to the heat to low and simmer for 15 minutes or until all the water is absorbed. Remove the quinoa from the heat and fluff with a fork. Let the quinoa cool until it has reached room temperature.

  2. To make the dressing, combine the olive oil, red wine vinegar, lemon juice, honey, garlic, mustard, and oregano with a whisk in a small bowl. Season with salt and pepper, until it reaches the desired taste.

  3. In a large bowl, combine the quinoa, tomatoes, cucumber, kalamata olives, red onion, and feta cheese. Pour the dressing over the salad and toss until its combined. Season with salt and pepper, enjoy!
