Healthy Recipe to Fuel Athletes

Ingredients

  • 2 cups cauliflower florets

  • 1 and ½ tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ¼ tsp black pepper

  • ½ cup buffalo sauce

  • 2 stalks celery, diced

  • 2 large carrots, diced

  • 6 small flour tortillas

  • Creamy avocado sauce

    • 1 small avocado

    • ½ cup chopped cilantro

    • juice from 2 limes

    • 1/3 cup olive oil

Instructions

  1. Preheat oven to 425 degrees and spray a baking sheet with nonstick cooking spray

  2. In a large bowl, add cauliflower, olive oil, garlic powder, paprika, black pepper, and ¼ cup buffalo sauce and mix together

  3. Spread the cauliflower evenly on a baking sheet and bake for 20 minutes. For crispier cauliflower turn the broiler on for 3 minutes after baking for 20 minutes, or until they are as crisp as you want them

  4. Heat the the rest of the buffalo sauce up in the microwave for about 20-30 seconds. Add the cauliflower and warm buffalo sauce in a bowl and toss together

  5. To make the avocado sauce add all the ingredients to a blender/food processor. Add water til you get the desire consistency.

  6. To assemble the tacos, fill each tortilla with the cauliflower, diced celery, and diced carrots. Drizzle the avocado sauce and any additional buffalo sauce on the top. Enjoy!

Toddler Art Playgroup

The Urbana Park District is hosting a Toddler Art Playgroup with Headstart for activities and more at the Phillips Recreation Center on February 11 from 4:00 pm - 6:30 pm. Meet other parents kids in a setting where the whole family is invited. The groups will be making fun art projects and dinner will be provided. There is no registration and the event is free.
